RAISIN HAM SAUCE

Raisin Sauce is for Ham. You will find a few other uses for raisin sauce, it is good on sweet potatoes for instance, but Raisin Sauce was designed for, and is best with a nice baked ham. Raisin Sauce can be considered a rather sophisticated sauce, and is very good. It is also rather simple to do.

To do Raisin Sauce for Ham, choose a small saucepan and add:
  • 2 Tbl butter
  • 1/4 cup chopped onion
Saute a bit until onion is transparent, Add:
  • cup chicken stock
  • small piece of cinnamon
  • 2 cloves
  • slice of orange peel without white pith
Simmer ten minutes, strain, add:
  • 1/4 cup raisins
  • 2 Tbl lemon juice
  • Tbl vinegar
  • 1/2 cup brown sugar
Simmer a bit until raisins plump up. Add:
  • small handful pecans
Thicken with a bit of cornstarch dissolved in a Tbl of water. A small bit of Madiera, or other flavorful wine can also be a nice addition to Ham Sauce.

Serve hot with ham.
