FISH WITH SHRIMP SAUCE

Fish with Shrimp Sauce is a great recipe that works with almost any white fish. Fish with Shrimp Sauce is quick and easy enough for everday use and is sophisticated enough for company. Fish with Shrimp Sauce is also quite a versatile recipe, crab or lobster can be substuted for the shrimp, and the character of the dish changes with the type of fish used.

Enjoy your Fish with Shrimp Sauce with a steamed vegetable, some mashed or scalloped potatoes, a chunk of good bread and a bottle of dry white wine. Good enough for royalty, if they happen to visit.

To do Fish with Shrimp Sauce, in a shallow baking pan place:

  • 1 1/2 lb fish filets. Sprinkle with:
  • 1/2 cup onion, chopped. Pour over:
  • 1 1/2 cup whole milk
  • Bake at 400' for about 25 minutes or until fish flakes easy. Meanwhile, in a heavy saucepan, melt:

  • 3 Tbl butter. When melted, stir in:
  • 3 Tbl flour.
  • When the fish is done, pour the milk the fish was cooked in into the flour mixture. Cook until thick, adding a bit more milk if needed. Then add:

  • 1/2 tsp salt
  • good grind of white pepper
  • small handful chopped parsely
  • 1/3 cup grated Cheddar Cheese
  • a cup cooked small shrimp
  • 2 Tbl Sherry
  • Mix together. Pour over fish and bake another 10 minutes, or until Fish with Shrimp Sauce is bubbly and lightly browned around the edges.
